This week's recipe is pretty simple and really capitalizes on the late
seasons' bounty.
Roasted Garlic Corn
6 ears of corn
1/4 cup butter
1 head of garlic
Juice of 1 lime
salt to taste
If you are using the grill heat and get the coals to smolder
This recipe can be done on a grill or in a broiler. Soak the ears of
corn (in husks) for 15 minutes. Meanwhile, soften the butter.
Wrap the garlic husk in aluminum foil and put on the grill, this
should take 30 minutes. Turn every 15 minutes
Put the ears of corn still in husks on the grill or in the broiler.
Let the outside char. about 15 minutes)
In a small bowl whisk softened butter, garlic, salt and lime.
Peel back husks and put butter on corn.
Enjoy!
