When you select Open, Quick access will appear in the left nav column, listing the shared document libraries that you use and a Show more... option. Click this to display all of your recently accessed locations on the right under the Recent section. Below the Recent section the Your Teams section lists all of the teams that you belong to.
By default, a standard Jump List contains two categories: recent items and pinned items, although because only categories with content are shown in the UI, neither of these categories are shown on first launch. Always present are an application launch icon (to launch more instances of the application), an option to pin or unpin the application from the taskbar, and a Close command for any open windows.
You cannot access the shell's Jump List directly or read its contents into the JumpList class. Instead, the JumpList class provides a representation of a Jump List that you can work with, and then apply to the Windows shell. You typically create a JumpList and set it one time when the application is first run. However, you can modify or replace the JumpList at run time.
'Quick Access' is a folder of shortcuts, you can pin other folders in there so that you can get to them quickly in File explorer.
It's also known as 'Frequent Folders'.
You can't pin files there, only folders.
EDIT- Just for completeness there are usually similar lists of recently accessed files if you right-click the icons of applications on the taskbar.
The setting for those is also in the above screenshot 'Taskbar Jump Lists'.
Thank you for your comments. I was referring to the saved files in the quick access folder. The "recent documents" feature was already disabled. Ccleaner is still deleting the saved files in the quick access folder. Any suggestions or should I file a bug report? Thanks
Reading your original post again I see that you have Windows 11.
Apparently the Recent Files going missing from Quick Access is a known issue with Win 11.
There can be a few possible causes, See here for more about that and some suggested fixes to try:

12.0.8 added a properly supported option to add Quick Access to the folder tree (including automatic refresh when folders are added/removed), plus a /quickaccess alias for easy access to the folder via other methods.
I use this button Go /quickaccess FOLDERCONTENT in a toolbar but it does not show folders like my documents, downloads, iCloud etc.
I can see iCloud photo's folder in quickaccess in opus but it gives an error when i click on it (an error occured when reading folder).
and its only when i cklick the items from the folder tree
when i click on the "quick access" in the folder tree itself and than double click an item in my folder view, the path is correctly fullpath and clickable.
Recent list is automatic list which shows you recently accessed folders.
QuickAccess is like Favorites, but built in Windows Explorer and newer standard Windows dialogs, where you can pin or unpin folders as you like.
Just came here and saw you support the quick access feature. Looking now so long for a software which does that and finally I found one. Tried FreeCommander, XYPlorer and so on. I suggest you activate it as default and deactivate your own favorites bar, because the feature is really hidden and it helps so much. Especially in windows file selection dialogs like others mentioned before. I will buy it. Thanks and great work.
Although Microsoft designed this new view for users convenience but most of the Windows 10 users don't like this default view. They find it annoying as they have to click on This PC link in left-side pane to access disk drives each time they open File Explorer. Also sometimes users don't want to show frequently accessed folders or recently opened files in File Explorer due to privacy issues.
3. If you want to completely get rid of Quick Access/Home view from File Explorer, change the option "Open File Explorer to" from "Quick access" to "This PC" using drop-down list. It'll set the old This PC view as default in File Explorer and you'll always have disk drives page visible whenever you open File Explorer.

Does anyone know how to increase the pinned items to the left in file explorer under quick access since i would like to have more but it wont let me? When i search around i only find how to increases the pinned count when u right click icons on the taskbar...
If your only issue with the Quick access section is the fact that it shows many of your recently used files and folders, you can easily fix it. All you have to do is simply turn off this feature from the File Explorer.
My company just moved everything off of our server and onto BIM360. I am use to just having a series of folders on my quick access bar that will allow me to jump right to my family folder or project templates instead of browsing to the folder manually. Is there a way to do this now that all of our files are on BIM360? or a decent work around?
No sorry I don't tend to create desktop shortcuts for any projects on BIM 360. I do however create shortcuts in my web browsers which allows me to access my projects quicker, but I guess you want to access the files from your desktop not through a browser?
I know the web browser gives you a ton more options and is by far better to use, but it doesn't allow me to drag and drop or even open the family directly. I dont know why autodesk would lock this function out to the users along with renaming in the windows browser.

We heard you! With this update, the QAT is now shown by default and includes the Undo, Redo, and Save commands, and the AutoSave has found its rightful place back on the title bar. You can quickly customize the QAT to keep only the commands you need.
You can change these settings for even faster access. For example, you can choose to open Quick Access immediately when you click the 1Password icon in your menu bar, notification area, or system tray.
Gnome Shell, which Ubuntu uses by default, actually does not support icons on the desktop. For "quick access", the desktop may not be the ideal place. When you are actually working, the desktop is covered most of the time. Ubuntu nevertheless supports desktop folders, however through a Gnome Shell extension that currently has limitations.
The way to quickly access folders would be through bookmarks in the file manager. You can quickly launch Files using the mouse or the keyboard. Bookmarked folders then are a mouse click away. Alternatively, typing two or three letters of the name will quickly reveal the folder, and then it takes hitting Enter to be in the folder.
On computer running Windows 10 Pro Technical Preview, you can directly open File Explorer to Quick access or This PC, as shown in the following two pictures. As for how to make it, you can read on to find the answer.

It is very easy to import a customized Quick Access menu from one OpenComms Designer user to another. The Mac desktop displays the menu bar across the top of the screen and the Dock along the bottom. Use the Apple menu in the top-left corner of the desktop to open System Settings, where you can customize your Mac. Use the Dock for quick access to the apps you use most often.
