Both Tony and I were amazed that this banana bread was gluten-free! The texture was perfect. It was very moist and delicate, yet not too crumbly. This could easily be mistaken for a wheat flour-based bread. Equally pleasing, the flavor is a delicious blend of unique, yet healthy, ingredients. It was sweet, but not too sweet due to the slightly contrasting, yet very complimentary flavors of the flours used.
Always a bonus, the preparation was quite simple. Just add some mashed ripe bananas (there always seems to be a few of these around), 1/3 cup of oil, 2 large eggs, and some nuts if desired. I made just two small alterations to the directions. Rather than dusting the bread pan with rice flour, I used sugar for an extra hint of sweetness. Also, it stated a one-hour bake time, but the bread was completely done at 50 minutes, and my oven does not typically bake products more quickly than the suggested times.
As usual, I had a few goals/rules in mind when approaching this bread. First, no added sweetener besides the bananas. Told you that one already, I know ? Second, no nut butters. I LOVE nut butter and bananas together, and nut butters works really well in paleo breads, doing the job of eggs, oil, and even leavening in my opinion.
P.S. If I wanted to add some oatmeal should I add more oil or anything? I do like oatmeal in my banana bread and am only trying to stay away from wheat but I wanted to try the recipe as is before changing anything. Thanks!

This was the most authentic like gluten (and grain!) free banana bread I have had! The only substitution I had to make was using an equal amount of potato starch for the tapioca flour. I think next time I will try caramelizing the bananas first before mashing! Mmm.
I have made quite a few different paleo/gluten free banana breads over the past few years and most are more dense than this version. This is closest in texture and taste to traditional banana bread from a bakery or pastry shop, minus being so sweet. I love this version and am so pleased with how it came out, although I was skeptical it would have enough sweetness without any added sugars. Definitely making again!

The Cinnamon Raisin Bread was another favorite around here. You do not need to toast any of the Canyon Bakehouse gluten-free breads but I like Cinnamon Raisin Toast for breakfast on occasion. I did notice that the Canyon Bakehouse breads toast up differently from the crispy toast I am accustomed to, it toasts up well on the outside, but stays soft on the inside. An interesting contrast of textures, but yummy nonetheless!
I like you have to travel to several different stores because no store carries everything I like. The range from our local grocery store-Stop n Shop-which has been great in adding new GF items, they even have a section dedicated to GF! I also shop at Whole Foods-pricey-, Trader Joes and a local health food store that has a great selection. Hope they carry the Canyon GF Bakehouse breads soon-The foccacia looks so good!
Vitamin Cottage, Sunflower Market. I love baking and usually make my own breads because what I have seen available that is GF in the stores is just not like btread to me. I'm another person who is limited and feels like I'm on an island away from other people when it comes to finding GF foods in my town. I travel to the next town 30 minutes away to shop at Hy-Vee. The staff there are great! I order a case of GF bread about once a month from them. They only offer two brands of GF bread and one to me is like styrofoam. The pictures of these breads look AMAZING!!! I would love to win this and to try another brand of GF foods. I'm glad that more companies are coming forward to help make those on the GF lifestyle feel more like a normal person! Thank you!!
I do not have much to choose from for gluten free here in Hutchinson, Ks. Dillons and a couple of other stores has a small array in which to choose from. I also do not have the time to shop as I work two jobs .
Also hard to find things to eat as I am not home much to cook. Such a problem!

I like Vitamin Cottage and Whole Foods in Colorado Springs, CO. Prices are better depending on items at VC and I'll drive all the way to Whole Foods which is much further for Ginger Molasses cookies as theirs are much better. For stocking up on flours and grabbing a few products VC is really convenient. I still haven't found a decent bought pizza and am looking forward to trying any new breads as I haven't started trying to make my Mom's recipes since most of hers were in FL and I can't gain access now that she passed and she'd taken her recipes with her right before she died without me copying most of them! I miss her GF pancakes and waffles as they could have been packaged and branded. I'm still learning!!
I prefer to buy gluten free in my local Fry's. The Fry's by me is close to a retirement community so their selection of gluten free foods is huge! and wonderful. Walking down three aisles of food. However, I would travel to Trader joe's or sunflower to have good bread, but they are 45 minutes away from me.

My family loved it! I did however, add 1/2 cup of brown sugar, 3 tbsp. of vegetable oil, chia seeds and chopped walnuts. I did 4 bananas to offset the extra ingredients above. Thumbs up from my kids who are now having to tolerate my new gluten sensitivity.

This is the absolute best gluten free banana bread recipe I have found yet! I did add a little oil (I was out of applesauce which I usually substitute), and I added 1/4 tsp. nutmeg. It was so moist and just the right sweetness! yum.
For a novice home baker like me this has been the BEST gluten free banana bread. I did not change anything except I forgot to add the chips ? but once baked, I melted the chips and tried some topping decoration. It melts in your mouth, no after taste, perfect hydration, We are not gluten free and I mean perfection. Thank you for this recipe, its a keeper.
Thank you so very much for this wonderfully delicious recipe. I searched for a gluten free banana bread recipe to use some super ripe bananas. This was a 180 degree change for me in using almond flour and no honey or sugar. The loaf was fragrant and lovely coming out of the oven. Good on day one, better on day 2 as you indicated. Instead of chocolate chips, I added crushed toasted cocoa beans. Toasted slices of the bread for breakfast this morning. My husband and I experimented using butter, almond butter and cashew butter as spreads. All were yummy. Thank you so very much.

I will start with that I have successfully made many banana breads prior to trying this recipe. I knew the recipe was not great when the ratio of wet ingredients vs dry ingredients was way off. I was almost certain this recipe will be a fail when after combining all ingredients I ended up with a thick dry heavy mush. I baked it per recipe and sure enough came out thick and heavy like a brick; inedible as suspected. No one in my household was able stomach it, so it ended up in a trashcan. Waste of ingredients. How this recipe have so many reviews it beyond me.
I like these recipes that shows easy to follow recipe ingredients and also gives us lots of other friendly recipes to choose from. I am going to try the almond flour banana bread. I agree with whoever posted that this was the best banana bread recipe they had made. Ever. Whether gluten-free or not. I totally agree! This is the recipe I keep coming back to over and over. My kids might prefer regular flour but I make this just for me (and my husband). I cut a thick slice, wrap it and take it to work as my personal treat.
