My grandmother spent the last month visiting us here in Florida. I'm always excited when she visitis because I know our time together will be filled with chats about her life experiences, family drama, and food. I was able to document some of her recipes, while other dishes we cooked together required me to pay more attention to her technique so I wasn't able to write much down. One random day we decided to make a small pot of gurumba, a sweet mango dish cooked with sugar, geera (cumin), and a few other spices. This dish is typically enjoyed with dosti roti and delicious as an anytime meal. The dosti roti was a perfect pairing because it's so thin and light.

Dosti is the Hindi word for friendship and is the perfect description for this roti. Two small roti loi (dough balls) are flattened, brushed with oiled, then joined together, making them friends. The roti loi is rolled thinly and cooked on a tawah (iron skillet). Immediately after removing from the tawah, the roti is *clapped until the two rotis separate. My grandmother also makes them very small, about 6in in diameter. It can be enjoyed with gurumba, sweet rice, halwa, or any dish that pairs well with roti, which is pretty much anything.

Hi Alicia how is this different from your other roti recipe. Ingredients are same. I generally roll mine out coat with oil and sprinkle flour then fold into a ball and rest before final rolling. I see in this case the two pieces are paired. Other than the prep, what's different?

The major difference with this roti is that it is smaller in size and is not a flaky roti like paratha. I would say it's even similar to a tortilla when you pull it apart after cooking. It's thin and light. So although the ingredients are the same the final result is very different because there is no rolling to create air pockets/flakes. Hope this helps :).

I always enjoy dosti roti. It is always a welcome to sit back and relax while someone else cooks for you. It is especially a blessing when that person is your mother. I have always enjoyed my mother's home cooked meals. These meals are not just traditional, but show my heritage, Caribbean roots, and how Trinbagonians use the food available to them. We are a creative people and many dishes have evolved to reflect us and our circumstances.

Last evening, for dinner, I asked my mother for something different so she decided to make dosti roti and curry aloo. Now, I haven't eaten dosti roti for a long while so it was more than a welcome than the usual sada roti. Dosti roti is another type of roti we make in Trinidad. It's commonly called "two in one" roti because of how it's made. When making it, two balls of flour (loyas) are rolled out together, so when you cook it you are cooking both of them at the same time, that's why they are called Dosti or friends. Don't worry about my explanation, I took enough photos to show you how it's made.

Anyway, this roti goes well with curry aloo, (Oh! aloo is another name for potato). Dosti Roti and curry aloo is a terrific vegetarian meal. I encourage you to try this recipe, it is an easy home cooking recipe. On a floured board or clean counter roll out the two roti together with a rolling pin.

  • Save Lightly grease a hot baking stone or tawah. Then place the rolled out dough on the tawah until it is cooked on one side.

  • SaveTurn over and cook the other side. Remove and place on a clean towel.
  • Save
  • SaveInsert knife between the two layers and separate to allow the steam out. Keep warm in a clean towel.

The size of the roti is dependent on the size of tawah you have. What you should pay attention to rather, is how thin you roll out the roti(about 1/4 inch thick). The thinner the better. The roti should be cooked on both sides and slightly brown like in the picture. Also note the resting time and you should be on your way to making the perfect two in one roti. Hope this helps. Dosti Roti is also called two in one roti so you're getting 2 when you roast one roti.
