When you say "knighted" I assume you mean received the accolade rather than being appointed a knight eg in the regular honours lists or the various special honours lists and appointments (such as Governors General) that are announced from time to time. The problem with the knights of orders is that the appointment is gazetted but not the investiture/accolade. There are some exceptions - the investiture of some knights of the Royal Victorian Order are mentioned in the Court Circular and lady High Court Judges have their investiture mentioned in the Gazette when they are received by the Sovereign after their appointment. Only the accolades conferred on knights bachelor are gazetted (for historical reasons - until the late 60's, I think, a knight bachelor wasn't a "Sir" until he had received the accolade or was appointed by letters patent)
So far as Knights Bachelor are concerned the last regular investiture before the death of QUEEN ELIZABETH II was held at Buckingham Palace on 14 July 2022 by HRH The Princess Royal acting on behalf of the late Queen. At that investiture the Rt Hon Sir Robert Goodwill and the Sir David Harding as knights bachelor received the accolade. Or are you referring to knighthoods conferred by the late Queen in person? If so, I'll do a little more digging.
