I'm considering installing rope clutches to port/starboard of the sprayhood and installing single ST winches on each side. right now I have two non-ST winches on each side which seems a little excessive. Has anyone done this and did you have to either raise the winches and clutches or raise the organizers forward at the mast to clear the ridge lines coming off the hatch? If you have pictures of the set up I'd appreciate it.

I don’t think this answers your question…but I too had two non-ST winches on each cockpit coaming (port & starboard).

The larger [forward] primaries for the overlapping jib/genoa. I assume the smaller [aft] winches were for a symmetrical spinnaker.

About 10 years ago, I removed both sets, and replaced the primaries with self-tailing winches. I opted not to replace the second set of winches.

I guess cabin top winches would be good for running halyards and/or reefing lines back to the cockpit, if that’s how you are set up.

My halyards terminate at the mast…

I had cabin top winches and rope clutches on my P30  I wish that I had raised them about 1/2".  The lines just cleared what I think you are calling a ridge line, and the paint started to rub off a little over time.  Had I kept the boat, I would have added a pad under them.  I suspect the P10M would present a similar problem, and I don't think you hurt anything by raising them up a little.

On my P365, the rooftop winch is used for the main sheet.  There are no halyards or reefing lines led back to the cockpit.  The rooftop winch is not raised, but I believe it's base is taller than were the smaller ones on the P30.

Yes! Raised 1/2 to 3/4” I’d say. Turning blocks raised too. See pic.
