I see a pattern here. :-)
My dodger basically fell apart last season.   Had canvas maker build me a new one over the winter.  Reused existing frame

(Also a 10M)

i'd love to see pictures of 10M dodgers and Biminis. 
I added a seahood a few years ago and that's driving the need to sew a new dodger.

I hear you - I'm working my way up to it.
Started with new cockpit cushions, replaced the vinyl in the old dodger and just finished a new mainsail cover.
Still this will be the most difficult of the projects.
Waiting for weather and I'll order the materials

I’ve made 4 or 5 and always plan that one will be the last. You can do it  if you’re careful. I sew one section at a time and fit each one on the boat as I make them. It takes about ten trips to the boat. I think the Sailrite kit is a much better approach. My last dodger was on my P-30 and took the whole summer. Start early.

One really important thing to think about is order of assembly.  You want avoid having to push the plastic glass through the arm of the sewing machine.
If you have a standard machine that can be near impossible.   So you really want to avoid that.   I would consider making the dodger right window, and a dodger left window and either sew them together at the end or put a zipper in the middle.
Another approach would be to make the window cross the entire front of the dodger.   That might be best, from an assembly stand point and would give you good visibility.
 
My dodger has a right and left front window.  It also has a right side and left side window and the entire assembly zips together with the bimini to form and overhead enclosure.   I also have side panels to entirely enclose the cockpit.
 
My dodger is really over engineered.   Lots of zippers and snaps.  In fact, a crazy amount of snaps. 
 
Its likely 20 years old but it is in ok condition.  I know it wasn't always used. 
 
I'll look for some closeups of my dodger. 
 
I think I have pictures of  sewing new front windows into my dodger two years ago, but they might not be helpful.
I have a walking foot machine with a big arm that was really handy for the glass replacement.
Otherwise, I doubt I could have done the glass replacement  without cutting apart the dodger.
 
I bought the plastic "glass" from sailrite.
 
Do you have some canvas fabrication how to books?   I have a few I can recommend.

I'm planning on a removable front window, left and right fixed side windows and additional detachable left and right side flaps with smaller windows.

One design thought.... 

On mine.  I added added a support piece on each side between the two bows.   And then  diagnal supports fron the aft bow down to the cockpit commings.   These have a quick release pin.

So the dodger structure is ridged.   It doensnt rely on straps to keep dodger from folding up.    

Note..
When going downwind the mainsheet rides against the aft supports.   Thats ok.  Just make sure those side pieces are clear and dont get between support and mainsheet or it will chaff through quick

Another cofiguration you get with this setup is if you pull pins on aft support... the dodger doesnt collapes but folds forward.  Good at anchor /dock.  Opens up over companionway.  But still deflects wind and gives privacy .

If you want to fold dodger down.  Still possible...but you have to disconnect the supports between bows.  I think sailrite sells a quick fold version you can use.

And yes.  Put zippers in to have a connector between dodger and biminy

Oh and if you put in the aft supports.  When positioning the quick release pin...Just Make sure you have enough clearence for the winch handles ( on your jib winches)   to spin clear of the supports.
