Hey Audrey, and others,

What'd you use as a mesophilic culture for butter?

I've used yogurt, but it's lactophilic, and the idea of making butter
on the counter without the hassle of the incubator'd be nice.

Also, what's the interest level for a cheesemaking get-together in February?

i used a freeze-dried cheese spread (& buttermilk) culture i bought at people's and have been keeping it alive through the buttermilk. i have more if you want some.

I use commercial buttermilk for my culture (Organic Valley usually).
It's mesophilic and does fine at room temperature.

I think I'm too busy to help with a cheesemaking get-together right
now, unfortunately.
