My husband's church is on a 30 day fast. Does anyone have any tasty tried and true recipes? I've made lentil and barley soup, tofu with peanut sauce, a tofu scramble which is tofu, tomatoes, mushrooms, herbs and veggies. I've made bean burgers... and I have a promising recipe for a veggie "meatloaf" but it has cheese in it which is a no no.
 
Here's a little list of can't haves besides meats and fish. No dairy but he can have eggs. No sugars, no white rice, white flour, etc

Maya, have you tried google by entering vegetarian recipes?  I was going to send you this really good Ramen Noodle salad recipe but the dressing calls for sugar.  Could you use a sugar substitute like aspertame? I have not tried that myself but maybe I will as I use aspertame for other things just to cut down on calories.

Thanks Sandi.... that's a good idea to google... I just thought it would cut down on the research if someone had some good ones already. Yes... send the Ramen Noodle salad recipe... there's a sweetener made from a plant called Stevia I think that we bought for him.  I can improvise on things too.

I can't even begin to tell you how overjoyed I am to see you mentioning
Stevia as the best substitute to use. For those who have never heard of it,
it's a natural sugar substitute that doesn't have a 'black cloud'
surrounding its use or health risks. On the other hand, aspertame has all
sorts of issues associated with it and many feel that we're being poisoned
by its inclusion in so many of foods.

Google both terms separately and you'll quickly see what I mean. In the
meantime, here's one site that pretty much sums up how I feel about it after
already going through that research a while back.

O.K. I call it Cabbage/Ramen Noodle Salad
and it calls for one head of cabbage shredded (I buy a bag already shredded that also included carrots), 2 pkgs. Oriental Ramen Noodles (broken up; do not cook), 1/4 C sunflower seeds, 1/4 C. slivered almonds.
Toss together in a large bowl. 
Mix 1/2 C. vegetable oil (I use Virgin Olive Oil), 1/2 C. sugar (or substitute),1/3 C. white vinegar and the two Ramen noodle seasoning packets that come with the Ramen noodles.  Shake dressing in a small bottle and pour over the cabbage-noodle mixture. Add the dressing just before serving as it is best when noodles are still crunchy.  They get soggy when kept over as leftovers but it is still good.
My daughter-in-law brought this for our Christmas dinner and it is so easy to be sooo good.
Any questions, just ask.  I had to ask whether or not to cook the ramen noodles and I searched for the seasoning packets as I had never used ramen noodles before and did not know they came with the noodles.  
And to give you a chuckle, I was unfamiliar with eating sunflower seeds and I just bought them in the shell!  My first effort left me eating very slowly and shelling them as I went.  Duh!!!

When they happen, mistakes CAN be frustrating. But looking back on them

I have over 79MB worth of Vegetarian recipes (nearly 400 different
files) that I'd be happy to zip up and let you download from me if you'd
like. I'm sure not all of them are carb-free and some of the individual
files are actually large collections themselves, but I'm sure they'll give
you tons of ideas for things you can make as well as ingredients you can
substitute. I have my own file server, so you'd be downloading it directly
from my hard drive if you're interested. I just made the zip file and it's
now closer to 68MB.

Ok, Maya has just finished her download. Against what I had requested in my
server address info reply, someone else tried snagging it at the same time.
So I booted them off the server for not going along with the 'one at a time'
rule I'm forced to enforce.

Since no one else sent in a reply saying they want to get in line to get a
copy, I'm taking the server back offline for now. I'll keep the zip file
around so anyone not reading this thread until later can still get a copy if
they wish, but I won't be checking my email for at least a few hours while I
do some more 'setting up' in another newly installed operating system (WinXP
Pro 64-bit).

I'm sure I have plenty more meat &/or dairy-free ones, but they would be
mixed in among numerous other categories like casseroles, mexican, italian,
crock pot, etc.. All told, my current collection sits at just over 4.8GB
worth of files. To be fair, that includes several recipe programs, but they
really don't take up that much of the space. lol

Lots of good info at that site about Stevia Gman. The only thing is... it's kind of expensive. I only found it at one market, and it was 7 bucks for 50 packets. I'll have to see if I can find a better source.
 
Also... I went to see what Born Again American was about. My goodness... it's so inspiring. I didn't sign up for anything... but I'll return later.

I 'signed up' long before I ever knew about that site. My hope is that
more folks choose to get involved in how their country is run rather than
become a member of some collective group. It's the individual voices that
the lawmakers need to hear, not another special interest group.

Although I say all that like I'm my own island, that's not too accurate
a description. I actually am a member of numerous groups, the purpose of
which is to constantly have an influx of info on what's going on behind the
scenes. I then research that info to get a good feel for what groups are
pushing for what and then get in touch with my representatives to let them
know how I feel about it either way. If I see more harm coming from it than
what's being discussed, I bring that up. If I see benefits that are not
being considered, I bring that up. This kind of direct input is much more
valuable to them than any 'canned' text a group would ask us to send. As it
is right now, the loudest noises they hear is from special interests that
couldn't care less about any individual with even a slightly different
opinion. They only want what they want and they'll petition to get it their
way. The more the representatives hear from the individual people they've
been hired/voted in to represent, the less they'll feel a need to give in to
groups that don't have everyone in their best interest. :)

This brought to mind that I met one of your Michigan politicians shortly
after 9-11 when we took a bus trip with our local bank to tour New York
City, Washington D.C. and Gettysburg. It was a great trip and while in D.C.
we were waiting for an elevator and this nice gentlemen offered to let us
ride up in his and gave us his card. I think he was a Senator and I sent
him an e-mail after we got home thanking him for his kindness. I can't
remember his name and, looking through my address book, I don't find any
name that jogs my memory (found some that I wondered who the heck is that
though!)
Well--what do you know. I looked through my cardex (old from work) and
there is his card. Dale E. Kildee Member of Congress 9th District-Michigan.
Has his web site, phone, fax, etc. Wonder if he is still serving the State
of Michigan as a Congressman.

That a great point you're making here, Sandi. These folks (members of
congress) are mostly good people trying to do what they feel is right based
on the info that's presented to them. My point is that they really do NEED
to hear from us 'regular people' on what we need so much more than what they
get to hear from specialized groups trying to get a specific law passed that
helps them make money, destroy competition, funnel pork to their cause at
the expense of other, more worthy causes, etc.

For the most part, they are VERY accessible and are more than willing to
listen/consider any rational thinking we're willing to share. :)
