I think years ago I used to use a product called Accent. I think it was an MSG flavor enhancer. Well after there was talk about how bad it was for you I stopped. So I was watching a show last night on Foodnetwork called Food Detectives, and it was about MSG. It told how it was developed and etc. So they got a group of volunteers and invited them all to dinner and served Chinese food. Half the group got MSG in their food and half didn't. Afterwards they asked people how they felt and such. A few people in the group without MSG complained of symptoms. I think only one in the group who actually had it complained. But anyway... they said there has never been any accurate study of MSG and the bad report was from one doctor who had symptoms after one meal. I can't remember the facts now... but they concluded that MSG is not harmful. What say you all?

I have always heard that MSG is not good for people, kind of like too much sodium?  But I have never done a series study to see what the experts have concluded.

My first thought was, "This message was brought to you by your local MSG
growers". lol

Of course, my next thought was that I will definitely add this to my list of
things to research much more fully. I don't just want to know how it's
made. I also need to know as much as possible about what it does once
injested.

A far as flavor enhancement goes, nothing beats cutting back on flavor
stealers like excessive salt, pepper, garlic, etc. in the processing &
cooking of foods. By cutting back on strong additions, it allows our taste
buds to more fully examine the actual food. It takes a while for them to
recover from the onslaught of spices, but the result is a renewed
appreciation for taste. I'm not suggesting that spices be removed from
recipes; only that they be cut back some to make room for the flavor of the
actual food.

hahahahaha... you are funny Gman. I will look forward to whatever you can find out.
 
I do love my spices... I find I use more of them especially on meats since we cut out the sodium. I don't think I'm over doing it though.  I don't put much of anything on fresh veggies. I watch these cooking shows and they don't use many spices... but man...they just throw that salt and pepper around like crazy!!!

And the shame of that is that salt basically disappears when used DURING the
cooking stage. If you cook without it and just add a tiny bit to the
finished meal on your plate, you'll taste it more and need a LOT less of it.

It reminded me of the Star Trek movie where a gal says to Spock "Well, if
you change your mind, ..." and he replies with "Is there something wrong
with the one I have?". :)
