The reason is simple: Rocks and cracks of rocks are not elastic.
Living and dead blood vessels are elastic to some extent. Before they
completely lost their elasticity, dead blood vessels still could form
symmetric “bulges” of different diameters (width). This kind of blood
vessel remains are often found in fossils. Examples of fossilized
blood vessel remains with different diameters (widths) :
