Could Overview run on a Raspberry Pi?

I'm looking for a beginner Pi project and thought I might give it a try. I see that it's written for Ubuntu. If anyone else has done / has tried this, I'd love to learn more.

Yes, you could get it up and running. But it wouldn't be easy, and it wouldn't feel very great when you do :).

The Raspberry Pi v3 is a quad-core 1.2Ghz computer with 1GB of RAM. We recommend running Overview with at least 4GB of RAM. Furthermore, we recommend you use Docker to run Overview.

I'm betting you'd run out of memory until tweaking some settings; and even after tweaking, there's only so much you can accomplish without new architecture. Docker imposes a bit of memory overhead; and Java imposes a lot.
