I was just going through the settings (update blablabla) to change things back to what I wanted and stumbled across a section that allowed me to change the color and width of the current (and presumably other) tracks, but I can't find it again.  Where is this section?

If you go to favorites - swipe to the tracks, tap on a track - not the 3 dot menu - > you will see some details of the track like lenght...
 - in the top right corner of that screen you see some map+marker icon -> tap that one
 - you get a small dialog where you can select - show on map and a color - not thickness
 - unfortunately this setting will not be persistent to the track. It means if you remove the show on map checkmark this selection will be gone as well.

There is a second way for the current track, even better hidden
 - go to configure map  (I only know the German UI)
 - there must be something like maptype which by default is osmand
 - change this to - something like touring ...

After that you get new elements will be added at the bottom of the list where you can change the color and the thickness of the current recorded track.
If you change the mapstyle back to osmand - those entries will be gone, so thats why you will not find them back :-)

Thanks, someone in the comp.mobile.android newsgroup pointed me to the
map configuration thing, and I got lucky when I tried to change the type
to 'touring'.

I really HATE how the configuration options are arranged -- you have to
read someone's mind to know where/if/when things are and the official
documentation is so old as to be absolutely useless. It would be really
nice if it showed the entire option tree so you could see everything at
once.

Hey, I thought you were French for some reason :-)  I bet the same people do this stuff that write man pages for linux -- "What you want is in there, dammit, but you're gonna have to WORK for it!"

Put something like the lines below in a file named blablabla.render.xml and put the file in folder osmand/rendering. You can change color and width of recorded tracks and planned route.

<?xml version="1.0" encoding="utf-8"?>
<renderingStyle name="Route" depends="default" defaultColor="#ffffff" version="1">

<renderingAttribute name="route">
<filter strokeWidth="6" color="#000000">
<filter nightMode="true"/>
</filter>
</renderingAttribute>
<renderingAttribute name="gpx">
<filter strokeWidth="6" color="#A040A0">
<filter nightMode="true"/>
</filter>
</renderingAttribute>
</renderingStyle>

Once you have created the file you get a new map style option blablabla.

Has altering the track width functionality been lost?

I feel like I have searched everywhere but cannot find where to adjust.

It's in Configure map/GPX files/Appearance.  The setting affects all GPXs shown.  I don't know why the GPX functions are in two different menus.
