I think this is an OS problem. Every people who have reported me this issue were using vanilla Ubuntu.
I have no problem running the GTK interface on Gentoo and ArchLinux. I also tried on Mint, which based on Xubuntu 12.10 and encountered no problem.
The responsible piece of code seems to be the hexadecimal viewer of the interface. The code is pretty much standard and derived from the C version of GHex, I can't really pinpoint what is the bug.
I strongly suspect Ubuntu to have modified some core functions of GTK to integrate graphical apps into their Unity interface, thus breaking ruby-gtk2.
I'll try to find someone using Ubuntu and see what I can do. Anyway, I would recommend you to run it on another distribution. Possibly another flavour of Ubuntu not running their Unity interface (like Xubuntu, Kubuntu, etc.).
