There are two or three species of phalaenopsis that lose their leaves every year in winter, but these are rare, very small plants, and unlikely to be seen by any but expert growers. 

Generally, if all the leaves have dropped, the plant is very unlikely to recover. The most common reason for a Phalaenopsis to lose leaves (especially if they dropped suddenly after yellowing) is staying too wet. This can be from the plants being watered too frequently, from the roots sitting in water, or from the potting medium getting old and breaking down.

Exposure to extremely cold temperatures is also a cause for this kind of thing, but that is unlikely this time of year, unless the plant was placed directly in front of an air conditioner.

I cannot be more specific about causes because i do not know how long you have had them, whether you have gotten them to flower in the past and so on. But it is rarely possible to bring a leafless Phalaenopsis back
