  • 12 free range eggs
  • 1 1/2 Tbsps avocado oil, or olive oil
  • sea salt and fresh ground black pepper, to taste

  • Preheat an 11x17 inch rimmed baking sheet in your oven at 425 degrees f.
  • Yes. You really preheated the pan too.
  • Meanwhile very gently crack your eggs into a large measure cup.
  • Once your oven + pan is hot and reaches 425, carefully remove pan from your hot oven (using proper hot pads) and carefully drizzle pan with oil. Coat well.
  • Gently pour in the eggs and spread them out onto your hot pan.
  • Careful not to break yolks...but its OK if a few do break.
  • Season with sea salt and pepper to your taste.
  • Cook in the preheated oven for 8-10 minutes. (some ovens are hotter the others so you should check them out at about 5 minutes, and depending on your egg preference, you may want to cook longer).
  • Slice eggs up as shown and enjoy immediately!

  • 1Prepare your station:
  • Fill a medium/large stockpot with water and bring to a boil over high heat.
  • Add 2 cups of ice cubes to a deep bowl, and fill it halfway with cold water. Keep it near the pot to make the transfer smoother.
  • Use a spoon to carefully add the eggs into the boiling water.
2. Allow to Boil:
  • Once the eggs are done to your liking, use a slotted spoon to remove from boiling water gently into the ice bath. Allow to completely cool, for 5 minutes in the ice bath
4. Chill and Peel

  • Run the egg underwater while peeling to easily remove the shell.

If they don't have enough calcium to create the shell, it will result in very thin-shelled eggs and calcium will start being leached from the hen's bones.

You can buy commercially packaged crushed oyster shell, or you can save money by processing your eggshells to feed back to your hens.

Farmers and homesteaders have been feeding eggshells to their chickens for hundreds of years. My grandmother certainly wasn't running out to the feed store to buy oyster shell when she had eggshells at hand. It makes sense.

One word of caution: Never feed store bought eggshells or the shells from a friend or neighbor's flock, because they can contain bacteria that your hens are not accustomed to. Only feed your hens their ownshells.

Like anything else, there seems to be lots of different opinions about feeding eggshells back to the chickens who laid them. However, one thing that everyone agrees on is that laying hens need a lot of calcium. Every single egg that is laid contains an enormous amount of calcium. If the hen is not being provided with an extra source of it, then the rest of her body will suffer.

Homesteading folk have been feeding eggshells to their chickens for hundreds of years. It makes sense. Why throw away such an easily accessible source of the very nutrient that your chickens need most?

Further on what I said earlier: a hen that lays thin shelled eggs should also be removed from the flock before her younger sisters discover one of her broken open thin shelled eggs and learn that eggs have yummy insides.
