CatalogSource pod configuration EP

Hi everyone,

Continuing from last week's work group meeting dicussion on the changes to the CatalogSource spec to offer a way to override the pods spec of CatalogSource pods created for certain types/configuration of CatalogSource.

I would like to get some feedback from the community on whether I've listed all reasonable approaches and which option should be used.

Let me know if you have any questions - though if put them on the PR if possible.
