Grab a copy of Richard Williams' "The Animator's Survival Kit (second edition)". Gives you all you need to know about xsheets! No beginning animator ought to be without this book. Just get it.

As many others have posted some great links I'll just add that "X-Sheet" is short for "Exposure Sheet" as in the old days the cels had to be hand painted and photographed one by one. Having an X-Sheet allowed the animators to work on their timing as well as give clear instructions to the camera operators on how to photograph them for animation.
