I have a switch that I want to turn off if it has been on for a number of minutes. I found examples that helped me create a rule to do that (although it seems like it only works some of the time). I was hoping there was a way to show this timer in the openhab interface. I cannot seem to figure out how to make that happen. Anyone have any ideas?

In your rule (before "end") add something like

ItemFountainCount.postUpdate(counter)

where "(counter)" is the name of the timer variable you used, "ItemFountainCount" is whatever you want to call it, then add in your items config

Number    ItemFountainCount    "Counter MotSens: [%d]"

That did the trick for me. In my case it shows me the actual number of a counter, triggered by a motion sensor which turns on my fountain ...
