Easy Peasy customizer?

Hi all,
I have a version of Easy Peasy that I'm going to deploy to 10-15 students who want to test it out. If this is successful, I may use this for the image next year.
I'm in the process of setting up one gold disk machine just the way I want it, then I'm going to use Clonezilla to make an image.

When I reverse the process and Clonezilla puts the image on a new machine, I want to change some of the settings. For example, the host name.
Does anyone have a script or package of some kind to do this kind of thing? It would be really nice to run one single script I can run that would ask me for various customization settings and would then just go in and make those changes. Is anyone using something like this?
