Depending on how elaborate they want the setup.

A "quick and dirty" way would be to download one of the numerous iphone/andriod apps for few $ that allows you to scan/save the data into a tab/excel/delimited format.

You can have a "watch" folder from within your Omnis application on a timer object and import the files into Omnis. Or manually allow the client to import it at a batch each day.
