Just tried XcodeCapp on my machine and thought it was completely broken until I realized the it probably hadn't been built for Dark Mode on Mojave!

That is easily rectified (well, at least temporarily by turning off Dark Mode!).

However, I can't figure out how to remove projects from the project list on the left, once added.
Perhaps there's no way to do this yet?

Yes, there is a way. Click the minus-button at the bottom of the tableview with projects.

D’oh.  How did I miss that?  Some weird kind of blindness - maybe that’s evidence against zero-chrome buttons, but I should still have found it.  Possibly also had my window off the bottom of the screen at the time.
I tried select-and-delete, which I would have expected to work as an alternative method, but I appreciate that this is really just a utility and hardly something that warrants a lot of gold-plating.

Thanks.
