I just talked with Ralph Kropf at Yorktown Organics. He has too many laying hens and not enough market for the eggs. He needs to sell about 400 hens. The hens have always been fed organic feed. He didn't buy organic chicks to begin with, so he can't certify the eggs as organic, but they are organic. He is selling the 8-month-old hens for $4/apiece. It is not necessary that the chicks be "Organic" but only that they
are fed, housed and managed as Organic beginning no later than the
second day of their lives.

This may be true for some farms and if one feels that way I have no
issue for them.

For me, it is a matter of "better than Organic" which includes that
parents were both organically fed, raised on a pasture and each
generation of replacement birds for our egg business is grown to this
specification. We understand to start with we may not be able to find
such but we are breeding, hatching and raising our own replacements
for the future to make sure in the future that we are "Better than
Organic". For us it is not what we can "get away with" but rather how
much can we afford and do to produce the best possible nutritious egg,
within acceptable economical limits (what customers will pay).
