Since we were discussing linking oppressions:

I thought that you guys would be interested in this project. It's a
group putting together an anthology (to be published this winter it
seems) that links sexism/racism/speciesism. Apparently it started
because the black community was offended by PETA's advertising
campaigns (surprise surprise), and black vegans wanted to make sure
that minorities had a voice in the movement. The link below shows some
of the critiques that sparked their project.

This page has downloads of articles, including one that supposedly
analyzes The Way We Eat with a "racial lens."
