Another CPU I would be interested in porting to would by be the LPC55S6c: https://www.nxp.com/products/processors-and-microcontrollers/arm-microcontrollers/general-purpose-mcus/lpc5500-cortex-m33/high-efficiency-arm-cortex-m33-based-microcontroller-family:LPC55S6x

It is a dual core, Cortex-M33 (ARMv8-M) with TrustZone so would involve some interesting development for ARMv8 and SMP integration.
