I can't remember who had actually asked me for the cookie recipe for that big pan of cookies I brought in a few weeks ago, so I'm just sending it to everyone...
"Chocolate-Chocolate-Chip-Walnut Cookies" from

2 cups all-purpose flour
2/3 cup unsweetened Dutch-processed cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup canola oil
1 1/2 cups sugar
4 teaspoons ground flaxseeds
1/2 cup soy milk
2 teaspoons vanilla extract
3/4 cup vegan chocolate chips
3/4 cup walnuts, chopped small
Preheat the oven to 350F.
In a large bowl, sift together the flour cocoa, baking soda, and salt.
In a separate large bowl, mix together the oil and sugar. Add the flaxseeds, soy milk, and vanilla, and mix well.
Fold in the dry ingredients in batches. The batter should get pretty stiff. Add the chocolate chips and walnuts, and fold in.
Roll the dough into 1-inch balls and flatten into disks about 1 1/2 inches in diameter. Place about an inch apart on the lined cookie sheets.
Bake for 10 minutes. Remove from the oven and let cool for about 5 minutes, then transfer to a wire rack to cool completely.
NOTES:
Their suggested variations:
- Replace the chocolate chips with white chocolate chips and replace the walnuts with dried cherries
- Omit the walnuts. Add 3 t of finely grated orange zest to the liquid ingredients.
- Omit the chocolate chips. Replace 1/4 C of the soy milk with hazelnut liqueur. Replace the walnuts with chopped, toasted hazelnuts.
My changes:
- They suggest just omitting the flaxseeds if you don't have those on hand, although "the cookies will be a bit less chewy but still yummy." You could also try adding an egg and reducing the milk to 1/4 cup (although I haven't actually tried this).
- I usually also add in 1 teaspoon or so of coffee extract.
- I've made these with gluten-free flour mix for the flour, and that works really well.
- You could replace some of the oil with applesauce to make them a little lower in fat.
- The baking time can vary a lot, and it's hard to tell with such a dark dough, but basically if they're not doughy-shiny on top they're probably pretty close? Last time I cooked everything for 14 minutes a batch, but my oven was being finicky...You can always try sticking a toothpick in to see if it comes out clean, too.
