I’m not freaking out yet.
As I understand it, 365 Apps need part of the Store infrastructure for self-update. That’s gone in Server 2022 and scheduled to be replaced later this year (for all platforms, not just Server 2022).
Also MSFT wants you to use Azure Virtual Desktops (multi-user Win10 devices) instead of RDS. To line their pockets.
So, if you want to complain – go for it. But it might be a tad premature.

Microsoft 365 Apps is not supported on Windows Server 2022 because feature updates to Microsoft 365 Apps rely on changes to the underlying operating system. Office LTSC 2021 is supported for direct deployments on Windows Server 2022, because Office LTSC 2021 doesn't receive feature updates.
Does anyone else have more information, other ways to interpret, or feel the need to panic?

No need to panic.
Office 2021 LTCS will be supported in RDS for a long time.
The M365/O365 apps are a separate entity altogether.
Yet another wedge to try and force peeps into the cloud.

Correct me if I’m wrong but Office 2021 LTSC is a perpetual license, not monthly subscription… So the client must make a large one-time purchase rather than small purchases every month.
Additionally, LTSC doesn’t offer Extended support:

Office LTSC 2021, including Project and Visio, have five years of Mainstream Support. There won’t be any Extended Support available for these products after the five years of Mainstream Support ends. For more information, see Microsoft Lifecycle Policy.
So that makes it just one year longer than the Microsoft 365 Apps subscription (if you want to remain in a supported state).
