This is a good suggestion.
For on-premises Exchange not a really big issue but one can also use Proofpoint as a SmartHost, which we do for all on-premises Exchange Servers, for outbound internal device relay while also giving incoming mail users a way better experience than the built-in O365 spam filter.

Postfix is one of the most popular, versatile, efficient and secure mail server that you can probably find.
Better even: M. W. Lucas is working on a book to explain how to use it (along plenty of other piece of software and protocols related to email)
