How can I measure the energy consumed by a node for operation symmetric encryption or hash function calculation?

you can write a model.
Seriously, you will have to write a model. The point is that the energy consumption of those operations can not be generalized: they depend too much on the CPU type and implemented algorithm.
As a consequence, there's no "pre cooked" model.
