Hello,

Is there any way to simulate software defined satellite networks (LEO, MEO, GEO) in NS-3?

Best regards,

Technically, it may be possible. Because ns-3 has support for simulating SDN with OpenFlow support and it has some support for simulating satellite networks also.
https://www.projectguideline.com/doing-software-defined-networkingsdn-simulation-under-ns-3/
https://github.com/sns3/sns3-satellite

so, if you combine these two simulations, then it may be possible to simulate what you are expecting.

ns-3 is not having rich support for visualization of the satellite network like OmNet++:

But, the following project has some support for 3D visualization of Satellite networks.
