the manual recommends the usage of AdminStudio to distribute microsoft
office. is it ok to run the setup.exe of office instead of the .msi
installer to work with snapshot ?

Using Snapshot on modern versions of Office tends to be quite tricky.
I'm not sure why the manual would recommend using Admin Studio for
distributing office.
Microsoft distributes and "Office Resource Kit" that is designed to make
custom installs.
In general if a Software Company makes their own software distribution
builders, they will work better/easier than a generic one like AdminStudio.

i tested office 2003 with snapshot but all shortcuts of the applications
target to the wrong path. as target i used the default
c:\Programm files\Microsoft Office but after the installation the path
was like C:\WINDOWS\Install\{123456....}\... .
i tried a few times with different target definitions but got allways
the same result.
same tests with open office run perfect.
in my opinion the most distributed software in a windows client
environment should be MS Office.
i will test admin studio with office 2003 and give you the results.
