Anyone had luck replacing an old 4.X/5.x Novell server with a simple
NAS box?

I tried this several years ago and had trouble with users sharing
database files at the same time.

It may or may not work depending on the solution. If you're wanting to
replace NetWare with something cheap, why not use SLES or even openSUSE
and configure Samba?

That's my next choice if I can't find a toaster device that works well.
