That is how I did it at one of my districts.  Teachers have laptops with iFolder backing up everything locally.  Students have "My Documents" redirected to their home directory.

The only issue that we experienced was when a teacher logged onto a "student" computer.  In that case, they have none of their files and anything that they save on their redirected my documents folder end up in their home directory, NOT in their iFolder on their laptop.  In this case, they will not have the files when they get home unless they manually copy them to their laptop.
 
Teaching them to use Web Interface for iFolder might solve this.
