However categories are strictly linked to the one account, your categories
will not override those set within another account, even within shared
folders or calendars (agendas)

Assuming you mean user.db, then that's where I'd guess it as as well. I'd
assume it is the same sort of display information as the rest of the
folder structure and would be stored in the user.db
