I'm not sure you can. I would recommend you consider something like
GWAVA Reload (disclaimer: I work for GWAVA), which allows incremenetal
backups, etc.

Also bear in mind that most messages are actually stored in offiles, all
the user and message databases contain are pointers to the actual content
files within offiles. So, without offiles, your backup will be useless

I don't think you can exclude \offiles, so your only real way round the
problem of offiles increasing is to clear the target directory before
DBCopy runs each time - this will of course make DBCopy run much longer.

Alternatively, depending on your backup system, just use the TSAFS system
and enable the GW support in there.
