Which tools would anyone recommend for watching IPX and IP traffic on a
network? I have a sneaky feeling I've got a chatty NIC somewhere I need
to locate.

On the server Set Track On will show you some things. Apart from that
Lanalyser or Sniffer are probably the most common utilities.
