If I try to copy the log on the current day and paste it, it will
pasted but when I attempt to open it in a word processor I get the old
"unknown file format message" What have we done to the logging
procedure???? and how do I fix it?????

While this might have been a better question for the BorderManager
installsetup forum, we can go ahead and work the issue here.
Sounds like you may not have authentication enabled on the new server.
Without authentication, BorderManager can't tell what user is going
where and will only put the IP address of the workstation in the log.
Also, from the sounds of it, you're using indexed logging. While this
is OK if you want to look at the logs in NWADMN32, I find the common
logging to be much better in that I can use a third party utility like
Webtrends (http://www.webtrends.com) or Telemate
(http://www.telemate.com).
