I had come to the conclusion that this is a template issue... Gantry 5.5.19 works ok on Joomla 5 with this template (Elixr) but Gantry 5.5.25 blows up on both Joomla 4 and Joomla 5.

Apparently others have run into the same issue.

Description of Issues / Upgrade Needs: On a Joomla 4.4.13 site on HostGator, php 8.2.18, Gantry 5.5.25 blows up with Class "Leafo\ScssPhp\Type" not found but backing down to 5.5.19 had it working again (5.5.23 did not work). I am moving it to another host to get past the database issue as HG does not provide the necessary database... just wondering what the issue would be.
