Steampunk - 'This Parrot is Dead'

I'm in need of some assistance to resurrect a dead parrot (although not a Norwegian Blue)!

My current  task is to create a pair of 'Steampunk' parrots that will hopefully converse with each other. Im relatively adept at resolving the mechanics and technical challenges but would greatly appreciate some assistance with the 'dark arts' for the Arduino code.

I have found some code that looks ideal for my task, this resides on Github, (https://github.com/dcpesses/arduino-animatronic-parrot/tree/master/arduino/AnimatronicParrot-v2).

The code is written to control a parrot using a 'WiiChuck' and a MSGEQ7 to manipulate several servo motors connected to a Pololu Micro Maestro 6-Channel USB Servo Controller.

All I require is a single servo directly driven by an Arduino and the MSGEQ7.

I will be using a DFPlayer as the audio source for the MSGEQ7 which in turn will hopefully move the parrots beak in a realistic fashion, simulating speech. 

Would anyone be able to help in adapting the code on Github for just a single servo/MSGEQ7?

My projects are created solely for myself, they are not commercial.

Have you made any progress?

I'm very strapped for time, but interested in your project.

From what I understand it may be quite simple, so if you can spare the time for a call/online meeting during the day (I get zero time on an evening at the moment) it would be good to understand more about how the system works and what timescales you have in mind - I cannot commit right now, but I may be able to help.
