Hi SdCCB brain trust.
I have a pale ale finishing up in my garage, now at 1.016 and 63 deg, dry hopping. This recipe usually finishes around 1.010. I am going away tomorrow for a ski trip for 7 days. Here's the question:
Do I let it sit in the garage until I am home and then warm for diaceytl rest ? OR
Do I bring it inside tomorrow (at ~68 deg) and let it finish/rest while I am gone?
Appreciate your advice!
David

Hi David, generally ales don't need a diacetyl rest that's more for lagers but an extended period at room temperature with a healthy yeast pitch is a good thing so you should be fine with the fermenter indoors while you're gone. Non-temp controlled garage might lend too much fluctuation. Cheers, can't wait to try it! -Corey
