A number of people at the Excel Club of New Mexico rally in Creede, CO
asked us to post our recipe for Limoncello. This is an Italian liquor
generally sipped as an after-dinner drink.


Limoncello

10 to 12 lemons
1 bottle 750 ml grain alcohol (Everclear brand or equivalent)
2 bottles 750 ml water
21 oz. sugar
3 empty 750 ml bottles with screw tops (wine bottles and the Everclear
bottle work well)

• Peel skin off lemons (be very careful to peel the yellow part
only).
• Place lemon skins and alcohol in a glass container, cover with
plastic wrap and let sit for 10 days. Feel free to give it an
occasional swirl.
• Boil water and add sugar to make a simple syrup.
• Let cool for 10 minutes.
• Strain alcohol/lemon mixture through cheesecloth or a coffee filter
into the simple syrup.
• Let cool and place in screw-top bottles.
• Store bottles in freezer until ready to use (it shouldn't freeze at
least down to 0 degrees).
• Serve directly from the freezer.
