I'm looking for a receipt to make Maatjes home.

In general, I'm interested in the fabrication of smoked fish, marinated
fish...

I tried recently to make a kind of gravadlax (filet of salmon marinated
with salt, sugar, dill and spices) with makrel. It's wonderful !

1 part sugar
2 part salt
fresh dill coarsly chopped
pepper

Actually Kaken is a special method of taking the guts ang gills out of
the fish.

I don't know more specifics, sorry...
