This recipe starts with shallow frying boiled potatoes cut into slices. These are fried in ghee till they are crispy golden brown from both sides. Ghee is key to adding that authentic flavor and giving them the crispy golden edges.

I have used roasted cumin powder, chaat masala, chilli powder, mango powder, rock salt and a squirt of lime juice. Just before serving, drizzle this aloo chaat with sweet tamarind chutney, sliced onions, coriander and nylon sev (bhujiya).

i have posted several other chaat recipes till, but i have to admit that alu chaat recipes is the most simple yet tasty recipe. traditionally aloo chaat recipes are prepared by deep frying the potato to wedges. however i have shallow fried the boiled potato cubes which makes it less oily and more healthier. perhaps boiling the potatoes and shallow frying may introduce an extra step, but certainly more healthier and cleaner as compared to just deep frying. having said that deep frying is more dearer to taste.

as compared to any other indian chaat recipes, even aloo chaat recipe is open ended. there are several variations to this fast food snack which changes with each regions. while, some prefer to keep it simple without adding onions or sev, but i personally like the combination of all toppings. if you prefer you can skip adding curd, onions and fine sev with just spice powders like chaat masala and chilli powder. also if you are vegan than add few drops of lemon juice which would help to introduce sour taste to it.

The great thing about aloo chat is that it can be made to your taste! Delhi-style aloo chaat is very popular, but I am sharing a simpler recipe. This easy recipe makes a tangy, sweet, chatpata chaat and the recipe can also be halved, doubled or tripled.

However tamarind chutney can be skipped and you can still enjoy this potato chaat with a mix of the various ground spices and lemon juice. It can be served as an evening snack or as a starter snack before meals.

While we are at this aloo chat recipe, let me tell you that there is one more chaat snack made with Aloo Tikki or crispy potato patties. I have earlier posted this differently made Aloo Tikki Chaat recipe.

Tip: Remove 1 to 2 potato cubes from the oil. Place them on a plate. Push a fork into the potato cubes to check if it is done. If the fork goes in easily then it is done, if not then leave the potatoes to cook for a bit longer.

Options: Add 1 finely chopped green chili (about teaspoon finely chopped). Green chilies add pungent hot notes to the potatoes. Only add green chilies if you like eating raw green chilies. Here I have not added green chillies, but I do add them on occasions.

You can also air-fry the potatoes instead of frying and follow the rest of the recipe. I have tried this air-frying method and the potatoes tasted just as delicious and they were a bit lighter compared to fried aloo chat.

Lastly garnished with crunchy sev and pomegranate arils.

Indian street foods need no introduction, they are immensely popular & are a common thing you see right on the street food carts to the upscale restaurants in India. You will find numerous mouthwatering dishes which include several appetizers and even wholesome meals.

Aloo Chaat originated in Indian subcontinent and is a popular street food in several North Indian states. In India you will see the street vendors using large tawa, an iron griddle in which diced potatoes are fried to perfection until crisp and golden.

For a home version the potatoes can be shallow fried, baked in an oven or even air fried. I prefer a healthy aloo chaat so I have parboiled the potatoes and fried them in a pan. In this post I share 3 ways to prepare or fry the potatoes for the chaat.

Various spices like chaat masala, red chilli powder and roasted cumin powder are used for the flavor and heat. Usually green chutney and sweet tamarind chutney both are used in the street style aloo chaat. But it is up to you to use them or simply skip or use fine chopped coriander leaves and lemon juice for the flavor and tang.

You will miss on the flavors from the chutney though but the substitutes work well.
For the topping you can use fresh chopped onions, crunchy sev and pomegranate arils as well. On occasions I have also topped this with chopped cucumbers which taste great.

Sev is crisp fried gram flour vermicelli snack that is used for garnishing various chaats. These are easily available in the Indian stores. If you do not have crunchy sev you can simply roast some papads, crush them and use. Other substitutes are crushed papdis, cornflakes, tortilla chips, baked potato chips or poha chivda.

The quantity to make the chutney mentioned in the recipe card is too less and may be hard to blend in a normal jar unless using a mini jar. So you can check this post on green chutney to make more quantity.

Optional for deep frying: or Alternately If you prefer deep fried crisp potatoes, then parboil potatoes. Air dry them for a while so there is not moisture over them. Heat oil in a kadai. Fry the potatoes in the hot oil until crisp and cooked thoroughly. Then skip to step 6. But I am just showing pan fried method here.

Transfer to a serving plate. Sprinkle some coriander leaves, generous amount of nylon sev and pomegranate seeds. You can replace pomegranate seeds with some sweet raisins and roasted cashews. Serve aloo chaat immediately.

Awesome recipe.. i have been following your blogs from many months but was not able to respond to any of the tried recipes. I almost prepare weekly 2 to 3 recipes from your cuisines. And all tasted good. Thnx for such simple and healthy recipes.

Can the potatoes be fried and kept one day before the party, and assembled the next day by warming on the iron skillet or in the oven before assembling to give a head start on the food prep before the actually party day?

Make Delhi Style Aloo Chaat in the air fryer with this easy recipe! Spicy, tangy air fried potatoes are tossed with spices and garnished with fresh cilantro. Drizzle some cilantro chutney on top for extra flavor.

Russet potato: you can use whatever potato you have on hand for this recipe but russet potatoes work best for this recipe. They are low in moisture so they crisp up really nice and are perfect to be used in this recipe.

Spices & herb: I have used the most common spices that we use in chaat for this recipe like chaat masala, cumin powder, kala namak. Fresh cilantro and mint add freshness to the chaat.

5- Transfer the potatoes to a bowl and add oil to it. I have used avocado oil but you can use any oil of choice. Stir well until potatoes are coated with the oil. Pre-heat air fryer at 380 F degrees for 2 minutes.

6- Once pre-heated, add the potatoes to the air fryer in a single layer (you may spray with air fryer with a oil-spray if you like). I have a large enough air fryer so I was able to do this in a single batch, if you have a small one, you might have to do this in 2 batches because you need to place them in a single later.
