Is there any documentation about how to communicate with a device via
the I2C interface?
Is there a special protocol to use like for GPIO (x=? and so on) ?

Not yet in the Netzer wiki but here:

The start, repeated start and stop conditions need to be encoded with
special characters and therefore some escaping is needed. Else the Network
host and the I2C slave communicate almost transparently with each other.
