Where are the setting to delete messages from news groups once you have read
them on Communicator 7.0?

Try View - Messages, select your option.

You can't delete specific messages, unless you posted them. You can
display only unread messages. Otherwise, you designate how many you want
to keep, how long you want to keep them, etc.
