I would like to build a small cruvinet -- one of those wine dispensers
that keeps the wine under nitrogen until it is poured into your glass.
Although they retain for about $600, it seems to me that these things
consist of a fancy box for the gas canister and a few special bottle
stoppers that pump the gas in and the wine out. The wine then lasts
indefinitely and you don't end up pouring out half the bottle if you
don't finish it quickly enough.
