One of my favorite ways to eat eggplant is to simply cut it in half,
longitudinally, stuck a butter knife into the cut surface at a 90 degree
angle to make slits all the way back to but not through the peel, then rub
well with pureed garlic and basil, making sure to get the puree into the
slits. Drizzle with oil and roast until it's done.
Serving suggestion: roast some tomatoes while you're at it. Squeeze them
over the eggplant.
