This is a very simple meal that makes Susan, the grrlie, happy anytime I make
it. I stole the name from a similar dish at a local restaurant here in Chapel
Hill.

Gaieng Gai
----------
1 can coconut milk (use the Lite if you are health conscience)
1 can sliced bamboo shoots (this is one of those shortish tins)
1 tablespoon of extra hot red curry paste
(This is to taste so in my case it is a very heaping tablespoon)
1.5 lbs. sliced boneless, skinless chicken breasts.
(We can get specially thin sliced ones here which work really great)

This is pretty much a poached chicken,
o Slice the chicken into small thin pieces.
o Bring the coconut milk, curry and bamboo to a boil.
o Lower flame to a simmer and add chicken.
o Cook covered for ~10 minutes or until chicken is done.

Rice
----
1 cup conventional white rice
2.25 cups water

Prepare the rice in the usual way,
o Bring the water to boil.
o Toss in the rice.
o Lower flame and simmer for 20 minutes.
o Remove from flame all together for 5 minutes.
o Serve.

Add the rice and chicken parts together to taste. :)
