Laïla Nehmé has an important article on the religious landscape of pre-Islamic Arabia in this open-access volume, but it's already somewhat outdated. Ahmad Al-Jallad has recently published a number of articles on the topic based on epigraphic evidence, almost all of which (including some drafts of forthcoming articles) are available on his Academia page.
