Bigoli Col Musso. Ragu d'asino or Donkey Ragu. Now look I know some of you are a bit freaked out by the donkey and horse posts, don't be. These things are delicacies here and the horses and donkeys are NOT mistreated. They are grown for their meat in a much better environment than the beef and chickens you eat everyday in the states so get over it. That said this was incredibly deep in flavor and complexity. The pasta was PERFECT just resisting to the bite and the Ragu was earthy and lingering on and on. With the Marion Valpolicella as a backdrop it was a micro regional poem of local meat that feasts on the same terroir as the Valpo is grown in. The white grape variety originates from Italy. Synonyms are Caricalasino and Carica l'Asino Bianco. It must not be confused with the varieties Barbassese Bianco, Barbera Bianca or Vermentino (synonym Carica l'Asino), despite seemingly suggestive synonyms or morphological similarities. The name means "load the donkey", which refers, mutatis mutandis, to the richness of the yield or also to the transport from the vineyard with this animal during the harvest. The late-ripening vine produces fragrant white wines with aromas of peaches and apricots. The variety, which may have originated in the Liguria region, was almost wiped out by phylloxera. Thanks to a reactivation programme, it is now being cultivated again in small quantities in the two provinces of Alessandria and Novara in Piedmont. There, it is basically blended with the local varieties Barbera Bianca, Cortese and Timorasso. In 2016, 5 hectares of vines were designated (Kym Anderson).
